A truly great salad begins long before it reaches the plate—it starts in the field. With flavourful greens, sun-ripened tomatoes, fragrant herbs and vegetables harvested at exactly the right moment.

Many of the ingredients used in our Drumlerhof kitchen come from our community garden, Taufrisch. More than 300 varieties are grown here, from familiar favourites to traditional local vegetables and rare heirloom varieties. Everything is cultivated naturally, using mixed cropping methods and with great respect for the rhythm of the seasons and the soil.

 

The Best of Summer

High summer is the most abundant time of year. Tender leafy salads and peppery rocket are joined by sweet Datterini tomatoes, richly flavoured beef tomatoes, colourful beets in shades of pink, red and white, crisp fennel, as well as strawberries and blueberries.
Every salad is different because every harvest is different. The ingredients are selected according to what is perfectly ripe on that particular day. Sometimes the result is beautifully simple, other times colourful, surprising and finished with a delicate fruity touch.
No matter the combination, one thing always remains the same: the ingredients take centre stage—freshly harvested, full of natural flavour and brought straight from the field to our kitchen.

 

The Dressing Makes the Difference

At Drumlerhof, every salad is served already perfectly dressed. We believe the dressing is just as important as the ingredients themselves.

The right balance of olive oil, acidity, salt and spices brings everything together. It enhances the sweetness of the tomatoes, adds freshness to the greens and perfectly complements more robust flavours such as beetroot and rocket. That way, every bite tastes exactly as our chefs intended. No overly oily leaves, no pockets of vinegar and no uneven seasoning—just a perfectly balanced salad from the first bite to the last.
