Stefan grew up in Signato, Renon, above Bolzano. In the spirit of sustainability. He ate what the farm had to offer. More was never necessary. Stefan’s mother Rosa, affectionately known as “Mutti”, tended her own fruit and vegetable garden here for over 80 years. We continue this tradition as a tribute to our mum and bring our fruit, vegetables and smoked sausages to Drumlerhof. You will taste the difference, we promise.

We also keep our communication honest. Of course, not everything comes from our own farm. We source the rest from the Taufrisch community farm in Campo Tures and from local producers in the immediate vicinity. Among other things, you can look forward to the new organic wine that we grow in Signato.

Where and how it all began

It’s early morning, and the first rays of sunshine are bathing the farm, its fields and orchards in a warm light. Stefan is ready for a new day of passionate work. This farm in Renon is Drumlerhof’s beating heart – it is here, in fact, that the produce we serve our guests comes from.

First, a tour of the apple orchards. Ripe, succulent fruits are hanging from the low trees. Stefan picks one, observing it with a smile. “Just a few more days until you’re perfect! Ruth can’t wait to make some new apple juice, and she has some new recipes in mind, too.”

Not far away, the grapes are ripening in the sun. They are Johanniter, a fungus-resistant PIWI variety especially suited to the farm’s natural cycles. The wine produced from these grapes reflects the core values of the Signato farm – sustainability, quality and nature at its best.

Here comes Franz on his tractor. He’s a good friend and neighbour. A friendly “good morning” and a short chat about the day’s schedule are in order.

 

Stefan buckles down, as there’s plenty to harvest today: fresh datterini tomatoes, gorgeous pumpkins, crisp salad and vitamin-packed cabbage.

When the harvesting is done, Stefan leaves the large vegetable garden and heads to the cellar, where his homemade Speck is maturing. The pork meat for it comes from the neighbouring farm – local, genuine, authentic flavour.

The scent of smoke fills the room as Stefan cuts off a piece. “Time for a short break,” he thinks.

Under the old, shady chestnut tree is the perfect place to sit for lunch. With Stefan is Andreas, a close school friend and neighbour who is also the local pioneer in apple growing. They share a meal of Speck, Schüttelbrot flat bread and a glass of organic wine. As the first farmer to grow apples in Signato and a good friend of Stefan’s, Andreas is always happy to help, offering his support and expertise in any way he can.

In the afternoon, the boxes are loaded with the fruit of the day’s hard work, ready for their journey to Drumlerhof. First, however, Stefan makes a detour to the “TauFrisch” plot. Over 300 types of vegetable are grown here, including ancient varieties. All parts of the plants are used in some way – even leaves and shoots have their place in the Drumlerhof kitchen.

When the products arrive at Drumlerhof, the kitchen brigade are ready to get going with the chopping, seasoning and tasting. Every step is masterfully executed, and soon the fresh ingredients turn into delightful culinary creations. What guests enjoy at dinner is the best the Signato farm and Drumlerhof have to offer – local flavours, sustainably farmed and lovingly prepared.

As night falls over Drumlerhof and the warm lights brighten up the end of a fulfilling day, the story goes on – with every bite and every glass allowing guests to experience the taste of South Tyrolean joie de vivre.
