Stefan Fauster, the owner of the Drumlerhof Hotel, grew up on a farm above Bolzano, in a little village called Signato. His childhood was not one of abundance. But on the farm, everything was done in a holistic way – even if that word was not yet used back then. Pigs, for example, were respected as animals and not intended only as filets. They were farmed in accordance with the principle that “no part of the pig is thrown away.” At the Drumlerhof Hotel, we utilise the entire animal, which of course has been certified for species-appropriate breeding practices as well as origin.
